NAADAN THENGA ARACHA CHICKEN CURRY(MOM'S RECIPE)






Ingredients:

2 cups grated coconut
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp chilli powder
1 tsp garlic paste
1 tsp ginger paste
1/2 kg chicken
1/2 tsp garam masala
2 small onions
curry leaves
water
oil
salt to taste


Method:

1.For coconut paste:

Roast coconut,turmeric pwdr,chilli pwdr and coriander pwdr in a frying pan(no oil,jus stir the dry ingerdients till the raw smell disappears). Grind this mixture along with water and ginger-garlic paste(grind well to form smooth and consistent paste).

2.Preparing the Chicken:

Marinate half kg chicken with 1/2 tsp each of turmeric pwdr,chilli pwdr,coriander pwdr n salt to taste. Shallow fry the chicken lightly and keep aside.

3.For the final product:

Heat oil in a pan and saute the onions till it turns golden,add the curry leaves and coconut paste. When the mixture starts boiling, add the lightly fried chicken pieces. Add salt (and more water if required). Sprinkle garam masala over it and cover with a lid.Cook on medium heat for around 10 minutes(wont take much time as the chicken has already been fried). Remove pan from heat and serve hot.
